1 chicken, cut into 16 pieces
4 lime leaves, midribs removed
2 salam (indonesian bay)leaves
2 lemongrass (white parts only),crushed
½ tablespoon salt
¼ teaspoon white pepper powder
1,000 ml coconut milkfrom 1 coconut
2 teaspoons cooking oilfor sautéing
ground spices blend:
8 cloves shallot
4 cloves garlic
5 candlenuts, fried
2 cm ginger
¼ teaspoon cumin
5 cm turmeric,toasted
1 teaspoon coriander seeds
1. Sauté ground spices blend, lime leaves, salam leaves, and lemongrasses until fragrant. Add in chicken. Stir it until it changes colour.
2. Add salt and pepper. Stir it well. Pour in coconut milk gradually. Cook it and keep stirring it until the chicken is well done and the spiced coconut milk is thickened.
3. Opor Ayam Kuning (Yellow Chicken Coconut Soup) is ready to serve.
