Fried tofu is one of favorite snacks in indonesia. it can also be served with a plate of rice for your lunch or dinner. give it a little twist with black shrimp paste filling. you will love this tahu goreng isi petis (shrimp paste fried tofu).
10 triangle skinned tofu, sliced without separating it, filling emptied and set aside
cooking oil for frying
dipping ingredients (mixed well)
100 grams all-purpose flour
1 tablespoon rice flour
½ teaspoon salt
¼ teaspoon white pepper powder
200 ml water
filling ingredients:
100 grams mung bean sprouts,cleaned
1 carrot, finely sliced
100 grams scraped tofu filling
5 cloves shallot,finely sliced
2 cloves garlic,finely sliced
2 large red chili peppers
2 tablespoons petis(black shrimp paste)
½ teaspoon salt
¼ teaspoon white pepper powder
¼ teaspoon sugar
100 ml water
1 scallion, sliced
1. Filling: sauté shallot, garlic, chili pepper, and petis until fragrant.
2. Add in carrot. Sauté it until half-cooked. Add in tofu filling, mung bean sprouts, salt, pepper, and sugar. Stir it well.
3. Pour in water. Cook it until all ingredients are well-cooked and the liquid is reduced. Remove it from heat. Set it aside.
4. Take a tofu. Spoon the filling inside it. Repeat it until the tofu skin and the filling are used.
5. Dip them into the dipping mixture. Fry them until the tofu are crispy and golden brown. Remove fried tofu from heat.
6. Tahu Goreng Isi Petis (Shrimp Paste Fried Tofu) is ready to serve.
