Urap terasi (shrimp paste coconut vegetable salad) is usually cooked as a side dish for balinese mixed rice. this dish is not really different with your usual urap (vegetables coconut salad); it only uses the larger amount of shrimp paste and eliminates the shallot.
2 bunches spinach(leaves and young stems only), boiled
2 bunches water spinach(leaves and young stems only), boiled
8 yardlong beans,cut into 3 cm sticks, boiled
150 grams mung bean sprouts,boiled
200 grams young coconut,coarsely grated
ground spices blend:
4 cloves shallot
2 cloves garlic
4 curly red chili peppers
2 red bird’s eye chili peppers
1 cm sand ginger
1 teaspoon toasted terasi(shrimp paste)
1 teaspoon salt
½ teaspoon sugar
1. Mix well grated coconut and spices blend.
2. Steam it over medium heat for 45 minutes until well-cooked. Set it aside.
3. Mix well spinach, water spinach, yardlong beans, and mung bean sprouts.
4. Add steamed coconut. Mix them well.
5. Urap Terasi (Shrimp Paste Coconut Vegetable Salad) is ready to serve.
