The spicy sambal is never failed to make our meal more delicious and splendid. this time, we can use terasi shrimp paste sambal as a key ingredient for cooking this tumis cumi terasi (squid and shrimp paste stir-fry). one rule on making this dish is not to cook squid too long to keep its texture nice and tender.
500 grams squid,sliced into 3 cm thick rings
1 teaspoon lime juice
1 salam (indonesian bay)leaf
2 lime leaves, midribs removed,sliced
1 large green chili pepper,sliced diagonally
1 red tomato, cut into small pieces
½ teaspoon salt
¼ teaspoon sugar
½ teaspoon jeruk limau(sambal lime)
100 ml water
2 tablespoon cooking oilfor sautéing
coarsely ground spices blend:
3 cloves garlic
4 cloves shallot
6 curly red chili peppers
2 large red chili peppers
1½ teaspoons shrimp paste,toasted
1. Marinate squid in lime juice. Let it set for 10 minutes.
2. Heat cooking oil on the pan. Sauté coarsely grated spices blend, salam leaf, and lime leaves until fragrant.
3. Add in squid. Stir it until it changes color. Add in green chili peppers and tomato. Stir it well. Add in salt, sugar, and jeruk limau juice. Stir it well.
4. Pour in water. Cook it until the squid is well-cooked and the spices blend is infused to the squid. Stir it well. Remove it from heat.
5. Tumis Cumi Terasi (Squid and Shrimp Paste Stir-Fry) is ready to serve.
