The aroma of tumis udang terasi (shrimp & shrimp paste stir-fry) is very appetizing. it tastes so good as well. smaller kind of shrimp like speckled shrimp or ginger shrimp will be a more suitable option for this dish. it will be crispier when fried and the taste is as good as the larger ones.
300 grams small shrimp,head removed
150 grams potato,diced
1 teaspoon lime juice
1 salam (indonesian bay)leaf
2 lime leaves, midribs removed,finely sliced
3 large green chili peppers,sliced diagonally
1 red tomato, cut into smaller pieces
¾ teaspoon salt
½ teaspoon jeruk limau(sambal lime) juice
100 ml water
2 tablespoons cooking oilfor sautéing
coarsely ground spices blend:
3 cloves garlic
4 cloves shallot
6 curly red chili peppers
2 large red chili peppers
1½ teaspoons shrimp paste,toasted
1. Marinate shrimp in lime juice. Let it set for 15 minutes. Fry it until crisply crusted. Fry potato as well. Set them aside.
2. Heat cooking oil. Sauté coarsely ground spices blend, salam leaves, and lime leaves until fragrant.
3. Add green chili pepper and tomato. Stir it until softened. Stir well.
4. Add shrimp and potato. Stir it until all ingredients are coated in the spices blend. Add salt, sugar, and jeruk limau juice. Stir well.
5. Pour in water. Cook them until well done while the spices blend is well-mixed and infused to the shrimp and potato. Remove from heat.
6. Tumis Udang Terasi (Shrimp & Shrimp Paste Stir-Fry) is ready to serve.
