Vegetable "Arem-Arem" Rice Cake with Peanut Sauce

  • Arem-arem (stuffed rice cake) is a popular fulfilling snack that almost everyone likes. many people see it as a good business idea, but most of them sell the same and classic arem-arem. if you want to stand out, you need to create a unique and different snack. stuff the rice cake with healthy vegetables and complete it with a splash of peanut sauce. vegetable "arem-arem" rice cake with peanut sauce will be the favorite one.

    Ingredients

    rice cake ingredients:
    1,125 grams rice,cleanly washed
    1,800 ml coconut milkfrom 1½ coconuts
    3¾ teaspoons salt
    3 salam (indonesian bay)leaves
    banana leaves for wrapping

    stuffing ingredients:
    600 grams oncom (fermented soy pulps),coarsely chopped
    150 grams carrot,finely diced
    150 grams string beans,sliced
    3 salam (indonesian bay) leaves
    3 cm galangal
    150 ml water
    3 tablespoons cooking oilfor sautéing

    ground spices blend for stuffing:
    6 red bird’s eye chili peppers
    12 cloves shallot
    6 cloves garlic
    4½ teaspoons salt
    2 teaspoons sugar

    peanut sauce ingredients:
    300 grams peanut,fried
    6 red bird’s eye chili peppers,fried
    15 curly red chili peppers,fried
    2 teaspoons vinegar
    375 ml hot water
    2½ teaspoons sugar
    1 teaspoon salt

    Cooking Steps

    1. Stuffing: heat cooking oil on the pan. Sauté ground spices blend, salam leaves, and galangal until fragrant. Add in oncom, carrot, and string beans. Stir well. Pour in water and cook it until the liquid is fully absorbed. Remove from heat and set it aside.
    2. Rice cake mixture: Bring the mixture of coconut milk, salt, and salam leaves to boil. Stir it continuously. Add rice. Keep stirring it until the liquid is absorbed into the rice and the rice mixture is thickened.
    3. Take a banana leaf. Spoon the rice cake mixture on top of it. Put the stuffing onto the center of rice mixture. Cover the stuffing with rice cake mixture and form it into cylinder.
    4. Close the banana leaf wrapper and secure the ends with toothpick. Steam it over medium heat for 40 minutes until well done.
    5. Peanut sauce: grind red bird’s eye chili peppers, curly red chili peppers, and garlic. Add peanut, salt, and sugar. Grind it into well-mixed mixture. Add hot water and vinegar. Stir it into paste. Serve it with the rice cake.
    6. Vegetable "Arem-Arem" Rice Cake with Peanut Sauce is ready to serve.
