1 chicken, butterflied
1 teaspoon tamarind juice
4 lemongrass, crushed
3 tablespoons sweet soy sauce
1,000 ml water
3 tablespoons cooking oil
ground spice blend:
5 red chili peppers
8 cloves shallot
4 cloves garlic
4 candlenuts
1 teaspoon coriander seeds
2 teaspoons salt
1. Sauté ground spices blend and lemongrass until fragrant. Add in chicken and stir it until it changes color.
2. Add tamarind juice and water gradually. Stir it occasionally. Add in sweet soy sauce. Cook it over low heat until the liquid is thick and reduced.
3. Grill chicken over a charcoal fire until browned. Glaze it with the remaining sauce when grilling.
