Vegetables and Lemon Basil Coconut Soup
Ingredients
2 (500 gram) sweet corn,kernelled
100 grams green beans,sliced diagonally
200 grams baby corns,sliced diagonally
100 grams peanuts
6 sprigs lemon basil leaves,separated from stems
2,000 ml coconut milk from 1 coconut
5 cloves shallot,finely sliced
3 cloves garlic,finely sliced
2 green chili peppers,sliced diagonally, deseeded
2 cm galangal,crushed
2 salam (indonesian bay)leaves
1 lemongrass, (white part only),crushed
3½ teaspoons salt
1½ teaspoons sugar
Cooking Steps
1. Bring the mixture of coconut milk, shallot, garlic, green chili pepper, galangal, salam leaves, and lemongrass to boil.
2. Add in sweet corn kernels, string beans, baby corn, peanut, salt, and sugar. Cook until done. Add lemon basil leaf. Stir well.
