    Ingredients

    300 grams beef,cut into pieces
    4 lime leaves, midribs removed
    1 salam (indonesian bay)leaves
    1 lemongrass (white part only),finely sliced
    6 green bird’s eye chili peppers
    6 cloves small shallots
    50 grams cucumber,halved lengthwise,
    50 grams carrots,julienned
    1 teaspoon salt
    ¾ teaspoon sugar
    300 ml water
    2 teaspoons lime juice
    1 tablespoon cooking oilfor sautéing

    ground spices blend:
    4 cloves shallot
    2 cloves garlic
    1 cm turmeric
    1 cm ginger
    2 curly red chili peppers
    2 red bird’s eye chili peppers

    Cooking Steps

    1. Heat cooking oil in the pan. Sauté ground spices blend, lime leaves, salam leaf, and lemongrass until fragrant.
    2. Add in beef. Stir until it changes colour. Add bird’s eye chili pepper, shallot, cucumber, and carrot. Cook until softened.
    3. Add salt, sugar, and water. Cook until the liquid is reduced and the ingredients are well done.
    4. Add lime juice. Stir well. Remove from heat.
    5. Acar Pedas Daging (Spicy Beef Pickles) is ready to serve.
