400 grams beef loin
250 grams coarsely grated coconut
1 egg, slightly beaten
4 tablespoons sago starch
4 lime leaves, midribs removed, finely sliced
cooking oil for frying
ground spices blend:
6 cloves shallot
3 cloves garlic
½ teaspoon cumin
1 teaspoon coriander seeds
3 curly red chili peppers
1 cm galangal
2 teaspoons salt
1 teaspoon sugar
1. Slice beef into 6 x 6 x ½ cm pieces. Crush it into thin pieces using a meat mallet or a pestle.
2. Mix beef with half of ground spices blend. Squeeze it quickly and repeatedly. Let it set for 1 hour.
3. Mix beef, the remaining ground spices blend, grated coconut, egg, sago starch, and lime leaves until the beef is coated with the mixture.
4. Fry it in hot oil until it is cooked and well-done. Remove it from heat.
