Black shrimp paste fried chicken is a unique and different option for you to cook at home. the savory taste of petis (black shrimp paste) in the sambal (chili sauce) can really build your appetite.
1 chicken, cut into 4 parts
650 ml water
2 salam (indonesian bay)leaves
2 cm galangal,crushed
5 lime leaves, midribs removed
3 lemongrass, white parts only, crushed
2¼ teaspoons salt
1 teaspoon brown palm sugar,finely chopped
1 tablespoon tamarind juicefrom 1 teaspoon tamarind juice dissolved in 2 tablespoons water
cooking oil for frying
ground spices blend:
12 cloves shallot
6 cloves garlic
4 candlenuts, toasted
2 cm turmeric,toasted
1 teaspoon coriander seeds
2 cm ginger
petis shrimp sambal:
4 cloves whole garlic,fried
10 curly red chili peppers,fried
10 bird’s eye chili peppers,fried
4 tablespoons petis (black shrimp paste)
¾ teaspoon salt
1 teaspoon brown palm sugar,finely chopped
2 tablespoons sweet soy sauce
50 ml lukewarm water
1. Boil chicken, water, salam leaves, galangal, lime leaves, lemongrass, salt, brown palm sugar, tamarind juice and ground spices blend until the liquid is dried and infused to the chicken.
2. Fry chicken over low heat until browned and well cooked. Remove it from heat.
3. Petis shrimp sambal: Grind all ingredients into smooth paste.
4. Put sambal petis on a plate. Put chicken on top of it. Briefly crush chicken with pestle until slightly flattened.
