Bakwan jagung (corn fritters) with peanut sauce is a delicacy your family will easily fall in love to. grated corn adds nice and sweet flavor while fresh corn kernel adds unique texture in this fritter. the peanut sauce also gives these fritters nice touch.
fritters ingredients:
100 grams grated corn
300 grams corn kernel
1 celery, finely sliced
50 grams all-purpose flour
50 grams rice flour
15 grams sago starch
75 ml water
1 egg
cooking oil for frying
ground spices blend for fritter:
4 cloves shallot
3 cloves garlic
1 teaspoon coriander seeds
1 teaspoon salt
¼ teaspoon white peppercorn
½ teaspoon sugar
peanut sauce ingredients:
100 grams peanut,fried, ground
150 ml lukewarm water
1 teaspoon jeruk limau (sambal lime)juice
ground spices blend for peanut sauce:
2 curly red chili peppers,fried
1 cm sand ginger
2 cloves garlic,fried
½ teaspoon terasi (shrimp paste),fried
½ teaspoon salt
1½ tablespoons brown palm sugar
1. Mix well fritters ingredients and the ground spices blend.
2. Heat cooking oil until it is ready for frying. Dip ladle into it. Spoon the mixture with the ladle and dip it into the hot oil until the outside is started to crust. Release the mixture from the ladle slowly and continue frying it until crispy and golden brown.
3. Peanut sauce: mix well ground peanut and ground spices blend. Pour lukewarm water into it. Stir well into smooth paste. Add lime juice. Stir.
4. Bakwan Jagung (Corn Fritter) is ready to serve with peanut sauce.
