800 grams beef feet
3 salam (indonesian bay)leaves
3 cm ginger,crushed
2 teaspoons salt
300 grams beef brisket
3 lemongrass (white parts only),crushed
6 lime leaves, midribs removed
3,000 ml water
5 teaspoons salt
½ teaspoon white pepper powder
1½ teaspoons sugar
2 blocks beef bouillon powder
5 tablespoons cooking oilfor sautéing
ground spices blend:
20 cloves shallot
6 cloves garlic
4 red chili peppers
8 cloves, toasted
4 cm ginger
2½ teaspoons coriander seeds
complements:
5 tablespoons crispy shallotfor topping
3 celery, finely sliced for topping
3 tomatoes, cubed
2 potatoes, steamed, fried, cut into pieces
1. Boil beef feet, salam leaves, ginger, and salt in 1,500 ml water until tender. Remove it from heat. Discard the broth.
2. Boil beef in the rest of 1,500 ml water until tender. Remove beef from water. Cut the beef into small pieces. Strain the broth.
3. Boil beef feet and beef brisket in beef broth until the liquid is bubbling.
4. Heat cooking oil on the pan. Sauté ground spices blend, lemongrass, and lime leaves until fragrant. Pour it into the beef soup. Add salt, pepper, and beef bouillon powder. Cook it until all ingredients are done. Remove it from heat.
