Nasi kuning (yellow rice) got its beautiful color from turmeric. besides pleasing to see, this rice dish is also healthy and delicious. nasi kuning is also a basic for making nasi tumpeng (coned yellow rice with assorted sides).
500 grams rice
50 grams white sticky rice
50 ml turmeric juicefrom squeezed grated turmeric
350 ml waterfor soaking
650 ml coconut milkfrom 1 coconut
4 pandan leaves
3 lemongrass, crushed
6 lime leaves, midribs removed
2½ teaspoons salt
¼ teaspoon turmeric powder
¼ teaspoon lime juice
1. Mix rice and sticky rice. Wash it thoroughly. Drain it. Soak it in the mixture of water and turmeric juice for 30 minutes until the rice is moist.
2. Steam the rice mixture for 25 minutes until half-cooked.
3. Boil the mixture of coconut milk, pandan leaves, lemongrass, lime leaves, turmeric powder, and salt. Keep stirring it until boiled. Turn off the heat.
4. Add in steamed rice. Stir it until the coconut milk is absorbed into the rice.
5. Steam it for 30 minutes until the rice is well-cooked. Remove it from heat. Add in lime juice. Stir it well.
6. Mould it in a greased big cone when still hot.
7. Nasi Kuning (Yellow Rice) is ready to serve.
