This ayam goreng lengkuas (galangal fried chicken) is a traditional dish from west java. the fried galangal spices blend really accentuates the taste of chicken. just do not fry it in overly hot oil to prevent the spices blend from burning. if you cook it right, you will have a very delicious chicken dish for your lunch or dinner.
1 chicken, cut into 8 pieces
150 grams galangal,grated
2 salam (indonesian bay)leaves
2 lemongrass (white part only),crushed
1 tablespoon tamarind juicefrom 1 teaspoon tamarind dissolved in 3 tablespoons water
300 ml coconut milkfrom ¼ coconut
cooking oil for frying
ground spices blend:
8 cloves shallot
4 cloves garlic
5 candlenuts, toasted
3 cm turmeric
2 cm ginger
½ tablespoon coriander seeds
½ tablespoon salt
1¼ teaspoons brown palm sugar,finely chopped
1. Mix well chicken, ground spices blend, galangal, salam leaves, lemongrass, and tamarind juice. Pour in coconut milk. Cook it until the sauce is infused to the chicken and the liquid is dried.
2. Fry chicken over medium heat until well done and golden brown. Remove from heat.
3. Fry the remaining spices blend until dried. Remove from heat.
4. Ayam Goreng Lengkuas (Galangal Fried Chicken) is ready to serve with dried spices blend topping.
