This nasi opor suir (rice and coconut shredded chicken) can be a fulfilling and satisfying meal if you cook it right. cook chicken over low heat so that the spice blend is infused better to the chicken and the coconut milk does not curdle.
ingredients:
750 grams white rice
2 pairs chicken thighs and legs, halved
½ tablespoon tamarind juice from 1 teaspoon tamarind dissolved in 2 tablespoons water
½ teaspoon salt
1 lemongrass, smashed
4 lime leaves, midribs removed
1 salam (indonesian bay) leaf
300 ml coconut milk from the second press of ½ coconut
100 ml coconut cream from the first press of ½ coconut
¾ teaspoon salt
1 teaspoon brown palm sugar, finely chopped
2 tablespoons for sautéing
ground spices blend for opor:
2 cloves garlic
5 cloves shallot
3 candlenuts, toasted
1 teaspoon coriander seeds
¼ teaspoon cumin
¼ teaspoon white peppercorn
½ cm ginger
1 cm galangal
chayote squash stir-fry ingredients:
200 grams chayote squash, julienned
10 quail eggs, hard-boiled
1 salam (indonesian bay) leaf
1 cm galangal, smashed
2 large red chili peppers, sliced diagonally
¾ teaspoon salt
½ teaspoon sugar
200 ml water
1 tablespoon coconut oil for sautéing
ground spices blend for chayote squash stir-fry
2 cloves garlic
5 cloves shallot
2 candlenuts, toasted
1. Opor: marinate chicken with tamarind juice and salt. Let it set for 10 minutes.
2. Sauté ground spices blend, salam leaf, and lime leaves until fragrant. Add in chicken. Stir it until it changes color.
3. Add in coconut milk, salt, and brown palm sugar. Cook it until the chicken is well done. Remove it from heat.
4. Shred chicken. Put it back to the coconut milk sauce. Pour in coconut cream. Cook it until the spiced coconut sauce is infused to the chicken, thick, and reduced.
5. Sautéed chayote squash: Mix chayote squash and salt. Squeeze it gently and repeatedly. Wash it cleanly.
6. Sauté ground spices blend, salam leaf, and galangal until fragrant. Add in red chili peppers. Stir-fry it until well done.
7. Add in chayote squash and quail eggs. Stir it well. Add water, salt, and sugar. Cook it until softened.
8. Put rice, sautéed chayote squash, and opor ayam. Sprinkle it with crispy shallot if you like.
