This water spinach and black shrimp paste stir-fry is an exceptional vegetable dish. it is so delicious! however, there are some rules on cooking this dish. firstly, there are many brands of petis in the market. choose one that suitable your palate. secondly, do not overcook water spinach to keep its color and texture.
200 grams water spinach,trimmed
100 grams yellow tofu,cut lengthwise into sticks, fried until crusted
4 cloves shallot,sliced
3 cloves garlic,sliced
2 red chili peppers,sliced diagonally
5 bird’s eye chili peppers,crushed
2 tablespoons petis (black shrimp paste)
1 teaspoon sweet soy sauce
¾ teaspoon salt
¼ teaspoon sugar
200 ml water
2 tablespoons cooking oilfor sautéing
1. Heat cooking oil on the pan. Sauté shallot, garlic, red chili peppers, and bird’s eye chili peppers until fragrant.
2. Add in petis, stir well.
3. Add in water spinach and tofu. Cook it until half-softened. Add in sweet soy sauce, salt, and water. Stir it well.
4. Pour in water. Cook it until reduced and the sauce is infused to the solid ingredients. Remove it fromm heat.
5. Water Spinach and Black Shrimp Paste Stir-Fry is ready to serve.
