    Ingredients

    150 grams dried rice vermicelli,soaked in hot water, drained
    1 tablespoon sweet soy sauce
    1 tablespoon light soy sauce
    ½ teaspoon white pepper powder

    stir-fry ingredients:
    2 large red chili peppers,sliced diagonally
    2 eggs, loosely beaten
    5 beef meatballs, halved
    50 grams shredded chicken
    3 stalks choy sum,cut into small pieces
    50 grams mung bean sprouts
    1 tablespoon sweet soy sauce
    ¾ teaspoon salt
    ½ teaspoon white pepper powder
    1 scallion, sliced diagonally
    3 tablespoons cooking oilfor sautéing

    ground spices blend:
    6 cloves shallot
    4 cloves garlic
    3 fried candlenuts
    1½ teaspoons fried shrimp paste

    Cooking Steps

    1. Coat rice vermicelli with sweet soy sauce, light soy sauce, and white pepper powder. Set it aside.
    2. Sauté ground spices blend and large red chili pepper until fragrant. Set it on the edge of the pan.
    3. Add in egg. Stir it until granuled. Add beef meatball and shredded chicken. Mix them well with the spices blend.
    4. Add choy sum and mung bean sprouts. Stir it until softened. Add in sweet soy sauce, salt, and pepper. Mix it well.
    5. Add rice vermicelli. Cook it until softened and well-cooked. Add in scallion. Stir well. Remove it from heat.
    6. Rice Vermicelli and Shrimp Paste Stir-Fry is ready to serve.
