This dendeng gepuk (crushed beef jerky) is not only suitable to serve on your daily menu but also your party table for a special occasion.
500 grams beef silverside
2 salam (indonesian bay)leaves
3 lemongrass, crushed
2 teaspoons salt
1½ tablespoons brown sugar
500 ml coconut milkfrom 1 coconut
cooking oil for frying
ground spices blend:
8 cloves shallots
4 cloves garlic
4 candlenuts, toasted
2 cm ginger
1 tablespoon coriander seeds
2 cm galangal
1. Cook beef in 500 ml water until boiling. Remove beef from water and drain it. Slice beef along the grain.
2. Boil beef, ground spices blend, salam leaves, lemongrass, salt, and brown sugar in coconut milk. Cook and stir it until the liquid is reduced and absorbed into the beef. Remove from heat.
3. Crush beef with meat mallet or pestle until widened and thin.
4. Fry beef quickly just until browned. Remove from oil. Drain it.
5. Dendeng Gepuk (Crushed Beef Jerky) is ready to serve.
