    Ingredients

    500 grams beef silverside,sliced with 0.7 cm thickness, crushed until slightly flattened
    8 lime leaves, midribs removed
    1 lemongrass, crushed
    1½ teaspoons salt
    200 grams brown palm sugar,finely chopped
    1 tamarind seed
    500 ml coconut creamfrom the first press of 2 coconuts
    700 ml coconut milkfrom the second press of 2 coconuts

    ground spices blend:
    8 cloves shallot
    3 cloves garlic
    1 tablespoon toasted coriander seeds
    6 candlenuts, toasted
    8 cm galangal

    Cooking Steps

    1. Boil beef in coconut milk until the liquid is bubbling.
    2. Add in lime leaves, lemongrass, salt, brown sugar, tamarind, and ground spices blend. Cook until the beef is slightly tenderized.
    3. Slightly lower the heat. Cook until coconut milk sauce is reduced. Add coconut cream. Lower the heat.
    4. Continue cook it until the sauce is oily and slightly dried. Remove from heat.
    5. Sauced Beef Jerky is ready to serve.
