Asinan jakarta (peanut pickled vegetables) consists of vegetables, tofu, and yellow noodles and drenched with peanut sauce. noodle crackers and red crackers are then sprinkled on top of it to add more texture. this dish will be very refreshing when served in a hot afternoon. let’s cook it at home!
100 grams leaf lettuce,cut into pieces
150 grams pickled chinese mustard greens,finely sliced
50 grams chives
150 grams cucumber,cut into pieces
100 grams cabbage,finely sliced
100 grams mung bean sprouts
200 grams white tofu,cut into 1 cm dices, steamed
6 noodles crackers, fried
50 grams red crackers,fried
50 grams peanut,fried
75 grams yellow noodles,soaked in hot water, drained
sauce ingredients:
500 ml water
100 grams brown palm sugar,finely chopped
ground spices blend:
150 grams fried peanut
2 red chili peppers
1 bird’s eye chili pepper
25 grams ebi (dried shrimp),toasted
2 teaspoons vinegar
¾ teaspoon salt
50 grams sugar
1. Sauce: boil brown sugar in the water until dissolved and bubbling. Strain it. Add ground spices blend. Bring it to boil. Let it cool.
2. Put vegetables and tofu in a bowl. Drench it with peanut sauce. Add crackers, yellow noodles, and fried peanut on top of it.
