This east javanese tahu telur (tofu scrambled egg with shrimp sauce) is not your usual breakfast. scramble eggs mixed with tofu and scallion served with black shrimp paste is served with refreshing chopped cucumber and a sprinkle of mung bean sprouts. you will immediately fall in love in this dish after the first bite.
150 grams tofu,cubed
2 eggs
1 scallion, finely sliced
½ teaspoon salt
¼ teaspoon white pepper powder
2 cloves garlic,fried quickly, ground
cooking oil for frying
sauce ingredients:
50 grams peanut,fried
2 cloves garlic
2 bird’s eye chili peppers
2 tablespoons petis(black shrimp paste)
1 teaspoon brown palm sugar
½ teaspoon salt
100 ml hot water
sides:
100 grams mung bean sprouts,boiled, drained
1 cucumber, diced
cassava starch crackers
1. Mix tofu, egg, scallion, salt, pepper, and garlic. Stir well.
2. Heat cooking oil on the pan. Pour one ladle of the mixture onto it. Fry it over low heat until golden brown and well-cooked. Set it aside.
3. Black shrimp paste sauce: grind garlic, bird’s eye chili peppers, peanut, petis, brown sugar, and salt into smooth paste. Pour in water gradually. Keep stirring it. Remove it from heat.
