Orak-Arik Buncis (Scrambled Egg with String Beans)
Ingredients
8 (60 grams) string beans,finely and diagonally sliced
1 carrot, finely julienned
3 eggs
3 cloves garlic,coarsely chopped
2 cloves shallot,coarsely chopped
3 red bird’s eye chili peppers,coarsely chopped
1 teaspoon ebi (dried shrimps),toasted, ground
½ teaspoon fish sauce
¼ teaspoon white pepper powder
¼ teaspoon sugar
25 ml water
1 scallion, finely sliced
2 tablespoons cooking oilfor sautéing
Cooking Steps
1. Heat cooking oil on the pan. Saute garlic and shallot until fragrant. Add in carrot and string beans. Stir it until softened. Add in water. Cook it until all ingredients are finely mixed. Set it on the edge of the pan.
2. Add egg. Stir it until granuled.
3. Add in bird’s eye chili pepper, ebi, fish sauce, white pepper powder, sugar, and scallion. Stir it until well-cooked. Remove it from heat.
4. Orak-Arik Buncis (Scrambled Egg with String Beans) is ready to serve.
