If you go to a palembang restaurant, you will find a dish called pindang patin (pangasius catfish turmeric soup). the taste is so extraordinary since it combines the savory taste of pangasius catfish and the refreshing broth. however, now you don't have to go to the restaurant to enjoy this dish since you can cook it yourself at home. just follow this easy recipe.
1 (500 grams) pangasius catfish,cut into 5 pieces
2 teaspoons lime juice
1,700 ml water
2 salam (indonesian bay)leaves
2 cm galangal,crushed
2 lemongrass, crushed
3 lime leaves, midribs removed
5 bilimbis, halved
3 green tomatoes, cut into pieces
10 bird’s eye chili peppers
4½ teaspoons salt
1 teaspoon sugar
2 scallion, cut into 2 cm pieces
5 sprigs lemon basil leaves
coarsely chopped spices blend:
8 cloves shallot
4 cloves garlic
6 curly red chili peppers
4 red bird’s eye chili peppers
3 cm turmeric,toasted
2 cm galangal
2 cm ginger
1. Marinate pangasius catfish with lime juice. Let it set for 15 minutes.
2. Heat cooking oil on a saucepan or cooking pot. Saute coarsely ground spices blend, salam leaves, galangal, lemongrass, and lime leaves until fragrant. Pour in water. Cook it until boiling.
3. Add pangasius catfish, bilimbis, green tomatoes, bird’s eye chili peppers, salt, and sugar. Cook it until well done. Add in lemon basil and scallion. Let it cooked for a while and remove it quickly from heat.
4. Pindang Patin (Pangasius Catfish Turmeric Soup) is ready to serve.
