The sweet and chewy klepon (sugar-stuffed pandan coconut rice balls) will make you always craving for it. this snack is a must try.
200 grams white glutinous rice flour
25 grams sago starch
1 teaspoon limewater
175 ml lukewarm water
10 ml suji juicefrom the squeezes of 10 suji leaves and 1 pandan
10 ml coconut milkfrom ¼ coconut
80 grams brown palm sugar,finely chopped for the filling
topping:
150 grams coarsely grated coconut
2 pandan leaves
¼ teaspoon salt
1. Topping: mix well all ingredients. Steam it for 20 minutes until well done. Set it aside.
2. Glutinous rice balls: Mix well white glutinous rice, sago starch, and limewater. Add in lukewarm water. Keep stirring it into elastic dough. Divide the dough into two parts.
3. Add suji juice to one part. Mix well. Add coconut milk to the other part. Mix well.
4. Take a little bit green and white dough. Flatten it side by side. Spoon brown sugar on top of it. Form it into two-coloured ball. Repeat this step until all balls are ready.
5. Bring water to boil. Add in balls. Boil it until the balls float to the water’s surface,
6. Roll balls to the coconut topping.
7. Klepon (Sugar-Stuffed Pandan Rice Balls with Coconut) is ready to serve. (yields 40 pieces)
