Opor ayam pedas (chicken in spicy coconut sauce) is a spicier alternative of mandatory dish to serve with rice cake in holy islamic festival. it absolutely builds any spicy food lovers' appetite.
1 chicken, cut into 12 parts
½ tablespoon lime juice
1 teaspoon salt
5 lime leaves, midribs removed
2 salam (indonesian bay)leaves
2 lemongrass (white parts only),crushed
1 teaspoon salt
½ teaspoon sugar
1,200 ml coconut milkfrom 1 coconut
2 teaspoon cooking oilfor sautéing
ground spices blend:
12 cloves shallot
4 cloves garlic
5 candlenuts, fried
2 cm ginger
3 curly red chili peppers
¼ teaspoon cumin
1 teaspoon coriander seeds
1. Marinate chicken with lime juice and salt.
2. Sauté ground spices blend, lime leaves, salam leaves, and lemongrass until fragrant. Add in chicken. Stir it well.
3. Add salt and sugar. Stir it well. Pour in coconut milk gradually. Cook it until the chicken is well done while the liquid is reduced and infused to the chicken. Remove it from heat.
4. Opor Ayam Pedas (Chicken in Spicy Coconut Sauce) is ready to serve.
