bubur sumsum ingredients:
150 grams rice flour
½ teaspoon salt
1,000 ml coconut milkfrom 1½ coconut
3 pandan leaves,knotted
bola ubi ingredients:
200 grams red sweet potato,steamed, mashed
¼ teaspoon salt
75 grams sago starch
500 ml water
250 grams brown palm sugar,finely chopped
1 pandan leaf,knotted
¼ teaspoon salt
20 grams sago starchdissolved in 2 tablespoons water for thickening
1. Bubur sumsum: In a large bowl, dissolve rice flour and salt in half of the coconut milk. Set it aside. In a sauce pan, heat the remaining coconut milk and pandan leaves. Keep stirring it until boiling. Pour in rice flour mixture. Stir it until thickened for 20 minutes.
2. Bola ubi: mix well sweet potato, salt, and sago starch into dough. Form it into bite-sized balls. Bring enough amount of water to boil. Add sweet potato balls and boil them until floating. Remove from heat and drain them. Set aside.
3. Boil water, brown palm sugar, pandanleaf, and salt until sugar is dissolved. Add in sweet potato balls. Cook it until boiling. Thicken it with sago starch mixture. Keep stirring it until thickened. Remove from heat.
4. Bubur Sumsum with Bola Ubi is ready to serve.
