Inspired by tropical fruit rambutans, Kitchenesia's kitchen team adapt the outer appearance rambutan fruit and apply it in Pisang Goreng Rambutan (fried banana in wonton wrapper). The banana represents the fruit flesh, andthe wonton skin acts as the pliable pines.
It is a fitting iftar appetizer for it is quick to whip up and has a soft yet sweet sensation. Follow the recipe below to make one at home.
Prep time: 45 minutes
Yields: 16 pieces
2 cooking bananas, chopeed into 1 1/2cm thick
25 wonton wrappers, sliced thin
800 ml cooking oil
For coating mix:
50 grams all-purpose flour
10 grams rice flour
1/8 tsp salt
3/4 tsp powdered sugar
1/2 tsp baking powder
50 ml iced water
1 chicken egg
1. Add all coating mix ingredients (except iced water and egg), mix well using hand mixer with medium speed. While mixing, pour iced water and egg. Mix well until blended
2. Dip banana in the mixture, make sure to coat banana thoroughly. Put dipped banana on wonton wrapper slices, and roll to make both stick to each other. Repeat this step until the banana runs out.
3. Heat oil over medium heat in wok. When simmers, place banana to the wok. Stir in between and cook up until golden brown.
5. Pisang Goreng Rambutan (fried banana in wonton wrapper) is ready to dig in.
