Ingredients

Ingredients

1 chicken thigh

500 ml water for boiling

200 grams dried egg noodles

3 tbsp sweet soy sauce

2 chicken eggs, beaten

5 beef meatballs, minced

75 grams cabbage, shredded

5 stalks of choy sum, chopped into 3cm length

1/2 tsp chicken broth powder

1/2 tsp salt

1/4 tsp white pepper powder

2 stalks of scallion, cut on the bias

2 tbsp cooking oil

For seasoning:

6 garlic cloves, fried

4 candle nuts, fried

1/2 tsp white pepper powder

Cooking Steps

1. Place chicken thigh and water in pot and bring them to boil for 10 minutes. Keep the one-fifth (100 ml) of chicken broth and discard the rest. Shred chicken thigh, and set aside.

2. Place noodles in a pot and bring it to boil over medium flame for 4-5 minutes. Stir occasionally in between. When it is soft, transfer noodles to colander to drain excess water. Put in bowl, and mix with sweet soy sauce. Mix well using fork until blended

3. Place all seasoning ingredients in pestle and grind well using mortar. Grind until making a soft paste.

4. Heat cook oil in a wok over medium flame. When the oil simmers, add seasoning paste, stir well until fragrant. Add eggs and stir well. When simmers, slide egg up the sides of wok.

5. Add chicken and meatballs, stir briefly. Add also cabbage and choy sum to the wok and stir until wilted. Slide egg off to mix it will other ingredients. Keep stirring.

6. Add chicken broth (from step 1), chicken broth powder, salt, and pepper. Stir until combined.

7. Add noodles, stir until it turns brown. Add scallion and stir briefly.

8. Remove to bowl. Serve Mie Goreng Jawa (Javanese stir-fried noodles) immediately as iftar’s main course.
