Cooking Time: 30 minutes
Yields: for 6 persons
6 rice cakes or ketupat (you can buy them ready made)
2cm piece of galangal, crushed
2 lemongrass stalks, use the white part only, crushed
1 tbsp dried shrimp, roasted then crushed
200 grams coyote, julienned
7 green beans, chop into 3cm length
2 liters coconut milk
1 1/8 tsp salt
1 tbsp palm sugar, ground
3 tbsp cooking oil
For spice paste:
12 shallots
6 garlic cloves
5 candle nuts, roasted
11 cayenne peppers
2cm piece of turmeric, burn briefly
1. Place all spice paste ingredients in a pestle. Grind using stone mortar until making a smooth paste. Set aside.
2. Prepare a pan and heat oil in it over low heat. When simmers, add spice paste, bay leaf, galangal, lemongrass, and dried shrimp, stir until fragrant. Add cayote and green bean, stir until wilted.
3. Pour coconut milk, salt, and palm sugar. Cook with lid on until boiled, and stir in between.
5. Serve Sayur Ketupat Betawi alongside with the rice cakes.
