1 chicken, cut into 24 parts
1 tablespoon of sour water (from 1 teaspoon of tamarind and 1 tablespoon of water)
2 1/2 teaspoons salt
1/2 teaspoon granulated sugar
1 egg, loosely stirred
100 ml coconut milk from 1/4 coconut
2 lemongrass stems, take the white part, sliced
4 green tomatoes, chopped
4 bay leaves, cut accordingly
10 pieces of banana leaf for wrapping
Ingredients for spices to grind:
10 red onions
4 cloves garlic
6 large green chilies
8 curly green chilies
4 candlenuts, roasted
2 cm ginger
2 cm turmeric, roasted
1. Marinate the chicken with a fine spice, acidic water, salt, sugar, eggs, coconut milk, lemongrass, tomatoes, and bay leaves. Let stand 30 minutes.
2. Take a banana leaf. Put the chicken dough on top of it. Wrap it. Pin with a stick on each edge.
3. Steam over medium heat for 60 minutes until it is fully-cooked.
