5 chicken eggs, beaten lightly
2 pieces of smoked beef, thinly sliced
100 grams oyster mushrooms, chopped
1 wood ear, soaked in lukewarm water then chopped
50 grams white button mushroom, chopped
1 red chili, sliced diagonally
1 leek, chopped
1 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon white pepper
1. Prepare a bowl. Hand-mix beaten egg, shallot, yellow onion, salt, smoked beef, and white pepper altogether in the bowl.
2. Add oyster mushroom, wood ear, white button mushroom, red chili, and leek altogether. Mix until well-combined
3. Heat cooking oil over a medium-fire pan. Pour dough onto the pan. Pan-fry until both sides brown.
4. Serve mushrooms omelet with steamed rice.
