Introducing sambal goreng kapri (spicy stir-fry snow pea), Kitchenesia's rendition of the popular sambal goreng ati (spicy stir-fry chicken liver) but replacing the meats with variants of veggies like snow pea and cauliflower.

Yields: 5 servings

Ingredients

250 grams snow pea, cleansed

100 grams carrot, sliced diagonally

100 grams cauliflower, cut into small florets

2 bayleaves

1 lemongrass

2 kaffir lime leaves

2 centimeters piece of galangal, crushed

2 teaspoon salt

1/4 teaspoon white pepper

1 teaspoon sugar

500 ml of coconut milk

2 tablespoons cooking oil

Spicy Paste ingredients:

7 shallots

3 cloves garlic

4 red chili

2 curly red chili

1 tomato

Grind all paste ingredients using mortar and pestle.

Cooking Steps

1. Heat oil over a medium-fire pan. Add paste, bayleaves, lemongrass, kaffir lime leaves, and galangal. Stir until fragrant.

2. Add snow pea, carrot, and cauliflower. Stir well. 

3. Add salt, white pepper, and sugar. Stir well.

4. Pour coconut milk into the pan. Stir until absorbed. 

5. Serve sambal goreng kapri (spicy stir-fry snow pea) with steamed rice.
