Kitchenesia.com - Indonesians love to process beef into hearty stew, crispy satay, or even just fry them away. But the sight of beef steak served in several Javanese restaurants may surprise first-time diners since it looks almost the same as European beefsteak.

In fact, this “Javanese beefsteak” proves that Indonesian loves foreign cuisines, but on top of that, they love theirs even more.

Selat solo (Javanese beefsteak) was one of many foods brought by Dutch colonizers. People of Solo, who were exposed to this new culture, adapted the European dish and fuse it with local culture. Thus, local condiment and spice like sweet soy sauce and nutmeg respectively are dominant in this dish.

Selat solo also gets it all: savoury sauce, tender beef, and also variants of vegetables as accompaniments. This is where its “selat” name came from. It uses many kinds of vegetables, just like salad.

Cooking time: 60 Menit

Yields: for 4 people

Ingredients

For beef steak:
300 grams tenderloin
1 tbsp sweet soy sauce
3 tsp Worcestershire sauce
1 tomato, chopped
3 garlic cloves, minced
1/2 tsp nutmeg powder
1/4 tsp pepper powder
1/2 tsp salt
1 litre of air
2 tbsp margarine

For marinade mixture:
1/2 tsp nutmeg powder
1 tsp salt
1 1/2 tbsp sweet soy sauce

For accompaniment:
50 grams green bean, chop into 3cm length
75 grams carrot, chop into 3cm length
200 grams baby potato
3 chicken eggs

Cooking Steps

1. Boil green bean, carrot, and baby potato until tender. To make it less time-consuming, you can boil them altogether in a pot. Boil chicken eggs separately until making a hard-boiled

2. Cut tenderloin into steaks with 1cm thickness. Stab them with fork 7-10 times each cut.

3. Place all marinade mixture ingredients in a bowl, and combine them well using fork. Coat steak with marinate one-by-one, make sure not to overcrowd bowl with patties to avoid uneven coating. Place coated steak in air-tight container and let them marinate in a fridge for 1 hour.

4. While marinating, prepare a wok and heat margarine over medium flame. Add shallot and tomatoes, stir until half-wilted. Pour water, and let it boil uncovered. Stir in between to let then blended well.

5. Add marinated steaks into the wok. Cook with lid on until the steaks change colour.

6. Add sweet soy sauce, Worcestershire sauce, nutmeg powder, pepper powder and salt. Cook with lid on until the steaks become tender, stir constantly in between.

7. Serve Selat Solo (Javanese beefsteak) alongside its accompaniments.
