Fried Beef Ribs with Salted Egg Sauce
Ingredients
750 grams beef ribs
2 salam or indonesian bay leaves
6 lime leaves, midribs removed
3 stalks lemongrass (white part only)
1,000 ml water
vegetable oil for frying
ground spices blend
10 cloves shallot
5 cloves garlic
4 candlenuts, toasted
3 cm ginger
3 cm galangal
2 cm turmeric
1 teaspoon coriander seeds
2½ teaspoons salt
salted egg sauce
3 cloves garlic,finely chopped
5 hard-boiled salted egg yolk, mashed
1/4 teaspoon salt
1/4 teaspoon white pepper powder
100 ml water
1 tablespoon cooking oilfor sauteing
1 teaspoon chili sauce
Cooking Steps
- Bring the mixture of spices blends, salam leaves, lime leaves, lemongrass, and water to boil. Remove from heat. Let it cool.
- Heat vegetable oil. Fry ribs until browned and well done. Remove from heat and crush it.
- Salted egg sauce: heat vegetable oil. Sauté garlic until fragrant. Add salted egg yolk, salt, pepper, and chicken bouillon powder. Pour in water. Stir it well into thick mixture. Remove from heat.
- Drench beef ribs with salted egg sauce.
