Salted egg is a special addition for any dish including these fried beef ribs. while indonesian fried beef ribs are usually served with sambal or chili sauce, salted egg sauce will be a surprise element in this dish.

Fried Beef Ribs with Salted Egg Sauce

Ingredients

750 grams beef ribs
2 salam or indonesian bay leaves
6 lime leaves, midribs removed
3 stalks lemongrass (white part only)
1,000 ml water
vegetable oil for frying

ground spices blend
10 cloves shallot
5 cloves garlic
4 candlenuts, toasted
3 cm ginger
3 cm galangal
2 cm turmeric
1 teaspoon coriander seeds
2½ teaspoons salt

salted egg sauce
3 cloves garlic,finely chopped
5 hard-boiled salted egg yolk, mashed
1/4 teaspoon salt
1/4 teaspoon white pepper powder
100 ml water
1 tablespoon cooking oilfor sauteing
1 teaspoon chili sauce

Cooking Steps

  1. Bring the mixture of spices blends, salam leaves, lime leaves, lemongrass, and water to boil. Remove from heat. Let it cool.
  2. Heat vegetable oil. Fry ribs until browned and well done. Remove from heat and crush it.
  3. Salted egg sauce: heat vegetable oil. Sauté garlic until fragrant. Add salted egg yolk, salt, pepper, and chicken bouillon powder. Pour in water. Stir it well into thick mixture. Remove from heat.
  4. Drench beef ribs with salted egg sauce.
