Javanese Fried Noodles
Ingredients
500 grams lo mi(big round noodles)
1 tablespoon light soy saucefor glazing noodles
1 tablespoon sweet soy saucefor glazing noodles
100 grams chicken,cooked,
5 beef meatballs,sliced
2 eggs, beaten
1/2 red tomato, diced
50 grams mung bean sprouts
50 grams cabbage,sliced
3 stalks choy sum,chopped
2 tablespoons sweet soy sauce
1/2 tablespoon light soy sauce
1/2 teaspoon salt
1 teaspoon white pepper powder
1/2 teaspoon sugar
250 ml chicken stock
2 scallion, finely sliced diagonally
1 celery, sliced
2 tablespoons cooking oilfor sautéing
crispy shallot for topping
celery, sliced, for topping
ground spices:
4 cloves garlic
5 cloves shallots,fried
3 candlenuts, roasted
15 grams ebi (dried shrimp),soaked in hot water,
Cooking Steps
- Glaze lo mi with light soy sauce and sweet soy sauce. Set it aside.
- Heat cooking oil. Saute ground spices until fragrant.
- Add eggs. Stir it until granuled.
- Set it aside on the edge of the pan.
- Add chicken and meatballs. Stir until crusted.
- Add tomato, mung bean sprout, cabbage, and choy sum. Stir it until slightly softened.
- Add in light soy sauce, sweet soy sauce, salt, pepper, and sugar. Stir well.
- Pour in chicken stock. Cook it until the stock is absorbed into the ingredients and the vegetables are softened.
- Add lo mi. Cook it until well done. Add scallion and celery. Stir it well. Remove from heat.
- Sprinkle Javanese fried noodles with crispy shallot and celery.
