Fried Rice with Laksa Seasoning

Ingredients

500 grams cold rice
2 chicken thigh fillet, diced
50 grams oncom (fermented soybean cake),toasted, coarsely mashed
1 tablespoon instant coconut milk
1 stalk lemongrass (white part only),finely chopped
2 lime leaves, midribs removed,sliced
1/2 tablespoon salt
1/4 teaspoon white pepper powder
1/4 teaspoon sugar
2 tablespoons cooking oilfor sautéing
25 grams lemon basil leaves

ground spices blend:
4 cloves shallot
1 clove garlic
1 cm turmeric,toasted
1 cm ginger
1/4 teaspoon coriander seeds
1/4 teaspoon cumin
2 curly red chili peppers
1/2 teaspoon terasi (shrimp paste),toasted

Cooking Steps

  1. Sauté ground spices blend, lemongrass, and lime leaves until fragrant.
  2. Add chicken and oncom (fermented soybean cake). Stir until the color changes.
  3. Add rice. Stir well.
  4. Add in coconut milk, salt, and sugar. Stir well. Remove it from heat. Sprinkle it with lemon basil leaves.
  5. Fried Rice with Laksa Seasoning is ready to serve.
