Fried Rice with Laksa Seasoning
Ingredients
500 grams cold rice
2 chicken thigh fillet, diced
50 grams oncom (fermented soybean cake),toasted, coarsely mashed
1 tablespoon instant coconut milk
1 stalk lemongrass (white part only),finely chopped
2 lime leaves, midribs removed,sliced
1/2 tablespoon salt
1/4 teaspoon white pepper powder
1/4 teaspoon sugar
2 tablespoons cooking oilfor sautéing
25 grams lemon basil leaves
ground spices blend:
4 cloves shallot
1 clove garlic
1 cm turmeric,toasted
1 cm ginger
1/4 teaspoon coriander seeds
1/4 teaspoon cumin
2 curly red chili peppers
1/2 teaspoon terasi (shrimp paste),toasted
Cooking Steps
- Sauté ground spices blend, lemongrass, and lime leaves until fragrant.
- Add chicken and oncom (fermented soybean cake). Stir until the color changes.
- Add rice. Stir well.
- Add in coconut milk, salt, and sugar. Stir well. Remove it from heat. Sprinkle it with lemon basil leaves.
- Fried Rice with Laksa Seasoning is ready to serve.
