Chicken Fried Rice

Ingredients

500 grams cold white rice
1 chicken thigh, boiled, fried, shredded
2 eggs, beaten
1 tablespoon sweet soy sauce
1/2 tablespoon salt
6 stalks choy sum,cut into 3 cm pieces
3 cabbage leaf, sliced
1 scallion, sliced into 1/2 cm pieces
2 tablespoons cooking oilfor sautéing
1 1/2 tablespoons crispy shallotsfor garnish

ground spices blend:
3 curly red chili peppers
3 cloves garlic,fried
4 cloves shallot,fried
2 candlenuts, fried
1/4 teaspoon white pepper powder
1 teaspoon ebi (dried shrimp),fried

toppings:
1 cucumber, sliced
1 red tomato, cut into pieces
1 tablespoon crispy shallots
1 stalk celery,finely sliced
3 fried eggs

Cooking Steps

  1. Heat cooking oil on the pan. Saute ground spices blend until fragrant. Set aside on the edge of the pan.
  2. Add eggs. Stir it until granuled.
  3. Add rice, sweet soy sauce, and salt. Stir well.
  4. Add in chicken, choy sum, cabbage, and scallion. Stir well. Cook until all ingredients are well done.
  5. Remove from heat. Serve chicken fried rice with its toppings and a sprinkle of crispy shallots.
