Mi kocok cirebon (cirebonese noodle soup) is a little different with the bandungnese one. however, it surely tastes as good.

Mi Kocok Cirebon (Cirebonese Noodle Soup)

Ingredients

200 grams wide egg noodles,boiled, drained
100 grams cabbage,sliced
1 scallion, sliced
2 tablespoons crispy shallot
2 limes, halved,: for serving
bird’s eye chili pepper sambalfor serving

soup ingredients
300 grams tetelan(the mixture of beef meat, joint, and fat scraped from beef bone)
1,500 ml water
1 cm galangal,crushed
3 lime leaves, midribs removed
1 tablespoon salt
1 teaspoon white pepper powder
1 teaspoon sugar
2 tablespoons cooking oilfor sautéing

ground spices blend
5 cloves shallot
3 cloves garlic
4 candlenuts, toasted
1 cm ginger,smashed
1 tablespoon ebi (dried shrimp),soaked in hot water, drained, toasted

Cooking Steps

  1. Heat water in the saucepan. Add in tetelan. Boil it until the liquid is heavily bubbling.
  2. Heat cooking oil on the pan. Sauté ground spices blend, galangal and lime leaves until fragrant. 
  3. Pour it into the tetelan soup.
  4. Add salt, pepper, and sugar. Simmer it until all ingredients are well-cooked.
  5. Put noodles, cabbage, scallion, and crispy shallot on a bowl. Drench it with tetelan soup. 
  6. Mi Kocok Cirebon (Cirebonese Noodle Soup) is ready to serve with bird’s chili pepper sambal and lime.
