Seafood Noodle Soup with Curry

Ingredients

400 grams lo mi (big round noodles),boiled and drained
100 grams prawn,peeled
100 grams mussels,shelled,
100 grams cabbage,finely sliced
1 lemongrass, crushed
3 lime leaves
1/2 cup tamarind juice
3 choy sum, cut into pieces
1 tomato, chopped
10 red chili peppers
2 scallions, cut into 1/2 cm length
1,500 ml coconut milkfrom ½ coconut
2 tablespoons crispy shallotsfor topping

ground spices blend
8 cloves shallot
4 cloves garlic
6 large red chili peppers
4 curly red chili peppers
3 cm turmeric,toasted
3 cm ginger
2 cm galangal
4 1/2 teaspoons salt
2 teaspoons sugar

Cooking Steps

  1. Bring the mixture of ground spices blend, coconut milk, lemongrass, lime leaves, and tamarind juice to boil. Stir it until the liquid is fragrant.
  2. Add shrimps and mussels. Cook it until it changes its colour.
  3. Add choy sum, tomatoes, and chili peppers. Stir it until softened.
  4. Add noodles. Stir well. Sprinkle it with scallion. Stir it well. Remove it from heat.
  5. Serve Seafood Noodle Soup with Curry along with a sprinkle of crispy shallots on top of it.
