Fried choy sum noodles with meatball can be a good idea for kids’ lunch box. it is healthy and very appetizing; the striking color will easily build your kids' appetite.

Fried Choy Sum Noodles with Meatballs

Ingredients

noodles ingredients:
150 grams high-gluten flour
25 grams cornstarch
25 grams choy sum,pureed along with 2 tablespoons water
1 duck egg
1/2 teaspoon salt
50 grams cornstarchfor topping

stir-fry ingredients
2 cloves garlic,minced
2 cloves shallot,chopped
2 eggs, beaten
50 grams champignon mushroom,sliced
5 beef meatballs, chopped
1 tablespoon light soy sauce
1/2 tablespoon sweet soy sauce
1 teaspoon salt
3 tablespoons water
2 tablespoons cooking oilfor sautéing

Cooking Steps

  1. Noodles: mix all noodles ingredient until clumped. Roll it out with noodle machine from thickness setting number 1 (thickest) to thickness setting number 6 (thinnest). Sprinkle it with cornstarch while rolling it out. Cut noodle with a small noodle cutter. Boil noodles until cooked. Drain it. Set it aside.
  2. Heat cooking oil on the pan. Sauté garlic and onion until fragrant. Set aside on the edge of the pan. 
  3. Add eggs. Stir it until granuled. 
  4. Add mushrooms. Stir it well. 
  5. Add in noodles, meatballs, light soy sauce, sweet soy sauce, and salt. 
  6. Pour in water. Stir it until all ingredients are well-cooked. Remove it from heat.
  7. Fried Choy Sum Noodles with Meatballs are ready to serve.
