Water Spinach and Chicken Feet Noodle

Ingredients

200 grams dried egg noodles,boiled and drained
2 bunches water spinach,stem removed, boiled, and drained
200 grams chicken feet
3 tablespoons light soy sauce
1 tablespoon sweet soy sauce
3/4 teaspoon salt
1/4 teaspoon white pepper powder
1/2 teaspoon sugar
750 ml water
1 tablespoon cornstarchdissolved in 2 tablespoons water
1 tablespoon cooking oil

ground spices blend:
4 cloves garlic
1 teaspoon ebi (dried shrimp),toasted
2 large red chili peppers

complements:
3 limes
2 tablespoons crispy shallots

Cooking Steps

  1. Boil chicken feet until tender. Reduce broth into 600 ml and continue boiling.
  2. Sauté ground spices blend until fragrant. Pour it into the boiling chicken feet.
  3. Add sweet soy sauce, light soy sauce, salt, pepper, and sugar. Stir well. Bring it to boil. 
  4. Add in cornstarch mixture to thicken it. Stir it countinuously until boiling. 
  5. Put noodles and water spinach in a bowl. Drench it with chicken feet sauce.
  6. Serve Water Spinach and Chicken Feet Noodles with its complements.
