Jakartanese Chicken Noodles
Ingredients
320 grams ready-to-usecurly noodle
200 grams choy sum,cut into pieces, drenched with boiling water
3 scallions, thinly sliceds
2 1/2 tablespoons crispy shallots
1000 ml chicken stock from boiling 400 grams chicken bones and 2 cm crushed ginger
seasoning per portion (stirred)
1/2 teaspoon light soy sauce
1/8 teaspoon white pepper powder
1 teaspoon chicken oil
stir-fry ingredients
250 grams chicken fillet,diced into ½ cm chunks
200 grams mushroom,sliced
1 tablespoon sweet soy sauce
1 1/2 tablespoons oyster sauce
1/2 tablespoon light soy sauce
1/4 teaspoon salt
1/4 teaspoon white pepper powder
1/4 teaspoon sugar
100 ml water
2 tablespoons cooking oil,for frying
ground spices blend
8 cloves shallot
5 cloves garlic
2 cm ginger
Cooking Steps
- Heat cooking oil on the pan. Sauté ground spices blend until fragrant.
- Add chicken. Stir until the color changes.
- Add in mushroom. Stir well.
- Add sweet soy sauce, oyster sauce, light soy sauce, salt, pepper, and sugar. Stir well.
- Add water. Stir it until all ingredients are cooked.
- Add seasoning into a bowl. Add noodles. Stir well.
- Add one spoon of the chicken stir-fry, choy sum, and a sprinkle of scallion on top of it. Drench it with hot soup. Sprinkle with crispy shallots.
- Serve Jakartanese Chicken Noodles with chili sauce, scallion and celery. Stir well before eat.
