Jakartanese Chicken Noodles

Ingredients

320 grams ready-to-usecurly noodle
200 grams choy sum,cut into pieces, drenched with boiling water
3 scallions, thinly sliceds
2 1/2 tablespoons crispy shallots
1000 ml chicken stock from boiling 400 grams chicken bones and 2 cm crushed ginger

seasoning per portion (stirred)
1/2 teaspoon light soy sauce
1/8 teaspoon white pepper powder
1 teaspoon chicken oil

stir-fry ingredients
250 grams chicken fillet,diced into ½ cm chunks
200 grams mushroom,sliced
1 tablespoon sweet soy sauce
1 1/2 tablespoons oyster sauce
1/2 tablespoon light soy sauce
1/4 teaspoon salt
1/4 teaspoon white pepper powder
1/4 teaspoon sugar
100 ml water
2 tablespoons cooking oil,for frying

ground spices blend
8 cloves shallot
5 cloves garlic
2 cm ginger

Cooking Steps

  1. Heat cooking oil on the pan. Sauté ground spices blend until fragrant.
  2. Add chicken. Stir until the color changes. 
  3. Add in mushroom. Stir well. 
  4. Add sweet soy sauce, oyster sauce, light soy sauce, salt, pepper, and sugar. Stir well. 
  5. Add water. Stir it until all ingredients are cooked. 
  6. Add seasoning into a bowl. Add noodles. Stir well. 
  7. Add one spoon of the chicken stir-fry, choy sum, and a sprinkle of scallion on top of it. Drench it with hot soup. Sprinkle with crispy shallots.
  8. Serve Jakartanese Chicken Noodles with chili sauce, scallion and celery. Stir well before eat.
