Mi Celor (Palembangnese Noodle Soup)
Ingredients
200 grams shrimp,peeled, leave the tails on
1/2 teaspoon lemon juice
150 grams egg noodles,boiled and drained
150 grams mung bean sprouts,boiled and drained
2 eggs, hard-boiled, sliced
3 sprigs garlic chives,cut into 2 cm length
3 tablespoons crispy shallots
sauce:
1000 ml shrimp broth
200 ml coconut milkfrom ¼ coconut
1/4 teaspoon white pepper powder
1 teaspoon sugar
1 tablespoon salt
1 teaspoon lemon juice
2 tablespoons all-purpose flourdissolved in 3 tablespoons water
1 egg, beaten
Cooking Steps
- Marinate shrimp with lemon juice. Set aside.
- Bring shrimp broth to boil. Add coconut milk, pepper, sugar, salt, and shrimp.
- Once boiling, add beaten eggs. Stir it until the egg is forming small ribbons.
- Add in flour mixture. Stir it while the liquid is simmering.
- Add lemon juice. Stir well.
- Put noodles, shrimps, and boiled eggs on a plate. Drench it with hot sauce.
- Serve Mi Celor (Palembangnese Noodle Soup) with chives and crispy shallot garnish.
