Lamb Ribs with Curry Sauce
Ingredients
750 grams lamb racks,cut into pieces
2 salam (indonesian bay)leaves
2 cm ginger,smashed
1,500 ml water
3 cloves shallot,thinly sliced
2 lemongrass (white parts only),smashed
3 cm cinnamon
2 star anise
4 cloves
3 cardamom pod
1 1/2 tablespoons salt
4 teaspoons sugar
1 green tomato, cut into pieces
2 sprigs curry leaves,picked from the stem
1,500 ml coconut milk from 1 coconut
3 tablespoons cooking oilfor sauteing
ground spices blend
8 cloves shallot
2 cloves garlic
5 large red chili peppers
2 curly red chili peppers
2 cm turmeric,toasted
2 cm ginger
1/2 teaspoon cumin
1/2 teaspoon star anise
1 tablespoon coriander seeds
Cooking Steps
- Boil lamb racks in the mixture of water, salam leaves, and ginger until the lamb is well done. Remove from heat and discard the liquid. Set aside the lamb racks.
- Heat cooking oil on the pan. Sauté ground spices blend, shallots, lemongrass, cinnamon, star anise, cloves, and cardamom until fragrant.
- Add in lamb racks, salt, and sugar. Stir until the lamb is covered in sauce. Add tomato and curry leaves. Stir it until softened.
- Pour in coconut milk. Stir it continuously until all ingredients are cooked. Remove it from heat.
- Lamb Ribs with Curry Sauce is ready to serve.
