Fried Beef Ribs with Mango Sambal
Ingredients
750 grams beef ribs,cut into 12 cm pieces
2 salam (indonesian bay)leaves
5 lime leaves, midrib removed, torn
2 stalks lemongrass,smashed
1,000 ml coconut water
2 teaspoons salt
1/4 teaspoon white pepper powder
1/2 teaspoon sugar
vegetable oil for frying
ground spices blend
12 cloves shallot
7 cloves garlic
2 cm ginger
2 cm galangal
4 cm turmeric,toasted
2 teaspoons coriander seeds
mango sambal
14 curly red chili peppers
10 large red chili peppers
1 teaspoon terasi (shrimp paste),fried
1/2 teaspoon salt
1 teaspoon brown palm sugar,chopped
100 grams young mango,julienned
1 tablespoon leftover cooking oilfrom frying shrimp paste
Cooking Steps
- Bring the mixture of water, salam leaves, lime leaves, lemongrass and ground spices blend. Bring it to boil.
- Add ribs. Boil it until tender.
- Deep-fry ribs over high heat until crusted. Set aside.
- Mango sambal: grind curly red chili pepper, large red chili pepper, terasi, salt, and sugar with pestle and mortar into paste. Add in mango. Stir well and squeeze it gently with pestle. Add cooking oil. Stir well.
- Put fried ribs on a plate. Add mango sambal on top of it.
- Fried Beef Ribs with Mango Sambal are ready to serve.
