Grilled Ribs with Green Chili Sambal

Ingredients

750 grams beef ribs
2 cm ginger,crushed
1 lemongrass, crushed
2 teaspoons salt
3 lime leaves, midribs removed
750 ml water

ground spices blend:
7 cloves shallot
4 cloves garlic

green chili sambal ingredients:
5 curly green chili peppers
3 large green chili peppers
5 cloves shallot
2 green tomato
1/2 tablespoon salt
1/2 teaspoon sugar
1 teaspoon lime juice
2 tablespoons cooking oilfor sautéing

Cooking Steps

  1. Braise beef ribs with the mixture of water, spices, ginger, lemongrass, salt and lime leaves in a high-pressure cooking pot until tender. Discard the liquid.
  2. Grill ribs until browned.
  3. Green chili pepper sambal: mash curly green chili pepper, big green chili, onion, and green tomatoes using pestle and mortar.
  4. Heat vegetable oil. Stir-fry green chili pepper sambal until fragrant.
  5. Add salt and sugar. Stir well. Add grilled ribs. Stir until sambal coats the ribs. Add lime juice. Stir well.
  6. Grilled Ribs with Green Chili Sambal are ready to serve.
