Grilled Ribs with Green Chili Sambal
Ingredients
750 grams beef ribs
2 cm ginger,crushed
1 lemongrass, crushed
2 teaspoons salt
3 lime leaves, midribs removed
750 ml water
ground spices blend:
7 cloves shallot
4 cloves garlic
green chili sambal ingredients:
5 curly green chili peppers
3 large green chili peppers
5 cloves shallot
2 green tomato
1/2 tablespoon salt
1/2 teaspoon sugar
1 teaspoon lime juice
2 tablespoons cooking oilfor sautéing
Cooking Steps
- Braise beef ribs with the mixture of water, spices, ginger, lemongrass, salt and lime leaves in a high-pressure cooking pot until tender. Discard the liquid.
- Grill ribs until browned.
- Green chili pepper sambal: mash curly green chili pepper, big green chili, onion, and green tomatoes using pestle and mortar.
- Heat vegetable oil. Stir-fry green chili pepper sambal until fragrant.
- Add salt and sugar. Stir well. Add grilled ribs. Stir until sambal coats the ribs. Add lime juice. Stir well.
- Grilled Ribs with Green Chili Sambal are ready to serve.
