Sour Ribs Soup
Ingredients
750 grams beef ribs,cut into pieces, washed
2,500 ml water
2 salam (indonesian bay)leaves
5 cloves garlic,finely sliced
5 cloves shallot,finely sliced
3 large green chili peppers,sliced into 1 cm pieces
3 large red chili peppers,sliced 1 cm pieces
2 cm galangal,smashed
100 grams green beans,cut into 3 cm pieces
5 bilimbis, cut into pieces
1 red tomato, wedged into 8 pieces
10 grams tamarinddissolved in 25 ml of water
2 1/2 tablespoons salt
25 grams brown palm sugar,finely sliced
2 tablespoons cooking oil,for frying
Cooking Steps
- Cook ribs, water, and salam leaf in a pressure cooker until tender. Remove from heat. Separate ribs and salam leaf from broth. Set it aside. Reduce the broth into 1500 ml.
- Heat cooking oil on the pan. Sauté garlic, shallot, red and green chili pepper, and ginger until fragrant.
- Pour in beef broth. Add beef ribs, green beans, bilimbi, red tomato, tamarind juice, salt, and brown palm sugar. Cook it until all ingredients are well done. Remove from heat.
- Sour Ribs Soup is ready to serve.
