Beef Ribs with Sour Soup

Ingredients

boiled ribs ingredients:
750 grams beef ribs
2 cm ginger,smashed
1,500 ml water

sour soup ingredients
1 salam (indonesian bay)leaf
2 lemongrass, smashed
2 large red chili peppers,sliced
2 large green chili peppers,sliced
1 red tomato, cut into pieces
4 tablespoons sweet soy sauce
1 tablespoon salt
1/4 teaspoon white pepper powder
1 teaspoon sugar
3 tablespoons tamarind juice,1 teaspoon of tamarind dissolved in 4 tablespoons of water
2 tablespoons cooking oilfor frying

ground spices blend:
8 cloves shallot
5 cloves garlic
3 candlenuts, toasted
2 cm turmeric,toasted

Cooking Steps

  1. Boiled ribs: boil ribs and ginger over low heat until cooked. Remove from heat. Remove ribs and ginger from broth and let the broth cooled in refrigerator. Remove the fat. Reduce the broth into 1500 ml.
  2. Put the ribs back to the broth and simmer it.
  3. Sauté ground spices blend, salam leaves, and lemongrass until fragrant. Add in red chili pepper, green chili pepper, and tomato. Sauté it until the ingredients are soft.
  4. Pour it into the ribs soup. Add sweet soy sauce, salt, pepper, and sugar. Stir it until cooked.
  5. Add in tamarind juice. Stir well. Cook it until boiling. Remove it from heat.
  6. Beef Ribs with Sour Soup are ready to serve.
