Beef Ribs with Rujak Sauce
Ingredients
700 grams beef ribs
5 lime leaves, midribs removed
2 lemongrass (white part only),smashed
2 salam (indonesian bay)leaves
1 tomato, chopped
1,200 ml water
1 teaspoon tamarind
1 tablespoon salt
2 teaspoons brown sugar,chopped
500 ml coconut milkfrom 1 coconut
4 tablespoons cooking oilfor sautéing
ground spices blend:
12 cloves shallot
6 cloves garlic
2 cm galangal
8 large red chili peppers
4 curly red chili peppers
4 candlenuts, toasted
1 teaspoon terasi (shrimp paste),fried
Cooking Steps
- Heat cooking oil on the pan. Sauté ground spices blend, lime leaves, lemongrass and salam leaves until fragrant.
- Add in ribs. Stir it well. Add tomato. Stir it until softened.
- Pour water in. Add tamarind, salt, and sugar. Cook it until the ribs are well done.
- Pour in coconut milk. Cook it until the sauce is thickened. Remove it from heat.
- Beef Ribs with Rujak Sauceis ready to serve.
